Celebrate World Stroke Week with a brain-boosting family recipe from Lucky Star

Peri-Peri Sardine Alfredo Pasta

Cooking Time: 20 minutes | Serves: 2-3
Ingredients:

  • 2 Tbsp butter
  • ½ white onion, chopped
  • 2 garlic cloves, minced
  • 2 cups cream
  • 1 tsp salt
  • ½ tsp nutmeg
  • 1 cup grated Parmesan cheese
  • Cooked pasta
  • 1 tin of Lucky Star Peri-Peri Sardines

Method:

  1. Heat 2 Tbsp butter in a pan over medium heat. Add the chopped onions and sauté until soft.
  2. Add the minced garlic and sauté for another minute.
  3. Stir in 2 cups of cream and season with salt, black pepper, and nutmeg. Let the mixture simmer over medium heat for about 4 minutes, allowing gentle bubbles to form around the edges. Avoid bringing it to a full boil to prevent the sauce from splitting.
  4. Gradually stir in ½ cup grated Parmesan cheese, followed by the Lucky Star Peri-Peri Sardines and their brine.
  5. Add your cooked pasta in batches, folding gently to ensure the sauce coats the pasta evenly.
  6. Serve with extra Parmesan and chopped parsley on top for garnish.
